Detection of ATP on a surface indicates improper cleaning and the presence of contaminants. Depending on what is being produced, the ATP found on a surface could be food residue, dirt, allergens and/or bacteria. A contaminated surface has the potential to harbor and/or support bacterial growth. Removing ATP from all surfaces will eliminate the food source for bacteria as well as the bacteria itself. Microorganisms cannot survive where there is no food to sustain their cell growth, reproduction, and proliferation.
